Understand the methodology that allows the participant to establish and implement a HACCP System within an organization, and identify the development of Prerequisite Programs:

  • Understanding the twelve steps for the development of a HACCP System.
  • Identification of good manufacturing practices.
  • The identification of potential hazards for the establishment of points, limits and critical control measures.
  • The identification and definition of mechanisms to implement, verify, record, monitor and measure the operation of the HACCP System within the processes of an organization.
  • The definition of the key factors and regulatory and regulatory requirements.
